Vineyard notes: 100% of the fruit for this wine was sourced from our mature Caves Road vineyard in Margaret River. These are some of the oldest vines in the Margaret River area.

Harvesting notes: The fruit was harvested in March 2008.

Wine characteristics at: November 2008

Alcohol Content: 12.5%

Residual Sugar: <2.5g/L (dry)

Colour: Pale green.

Nose: Initial aromas of citrus and passionfruit, with subtle gooseberry and cut grass edges.

Palate: The palate is restrained and elegant with lovely citrus and passionfruit flavours which actually carries considerable weight and complexity for a Sauvignon Blanc. The partial barrel fermentation gives the palate a nutty and textural component. The finish is long and minerally.

Condition: Excellent.

Cellaring notes: Best enjoyed young whilst the fresh fruit flavours dominate, however the wine will develop in the cellar for 3-5 years.

Best with: Chargrilled marinated octopus, roast salmon with buerre blanc sauce or pork souvlaki. Goat’s cheese is also a classic combination.

2007 Vintage:

"A far more interesting and sophisticated sav blanc than the normal juicy little thing. This has been partially barrel fermented, which has added both texture and a delightful aromatic lift on the nose. It's fine and almost steely but the structure and finesse are there to support some medium term cellaring. Very nice wine." Rating; 90/100
