Vineyard Notes: The grapes for this wine are
sourced from Dr Killerby’s original Geographe vineyard,
planted in 1973 and our Margaret River vineyard, planted
in 1978. The maturity of both of these vineyards allows
us to harvest fruit of considerable intensity.
Harvesting Notes: Throughout the months of February and March the fruit for this wine was carefully machine harvested in the cool of night. Winemaking Notes: Following harvesting, the fruit is carefully crushed into fermenters were it is fermented on skins to extract maximum flavour and colour. Following fermentation the wine is pressed to barrel for maturation in French oak barriques and hogsheads. Wine characteristics: Alcohol content: 14.0%. Residual Sugar: <2.5g/L Colour: Deep red. Nose: Lifted red berry fruit aromas combined with attractive briar, cigar box and vanillin oak nuances. |

Palate:
The palate is soft, rich and supple showing blackcurrant,
chocolate and red berry flavours. A soft and fine tannin
profile carries the flavours through the palate and ensures
this wine has considerable length. ------------------------------------------------------------------------------------------------------------- The 2005 Cabernet Sauvignon is a new release and has not yet been reviewed. Of previous vintages: 2003 Vintage: “Leafy, scented, briar and cigar box aromas; light-to medium-bodied, with well-defined blackcurrant/cassis flavours; good length. Screwcap. 13.9% alc. 2002 Vintage: “Honest,
early-drinking cabernet with a lightly musky and herbal
aroma of sweet, slightly jammy raspberries and red plums
over spicy, cedary oak. It’s smooth and creamy, with
vibrant, if uncomplicated red fruit flavours over an
assertive spine and cedar/vanilla oak.”
