“Blending Cabernet Sauvignon wine with various proportions of wines of other varieties can improve the weight and flavour mid-palate and soften the firmness of the tannins…. Merlot is used to give a more rounded mouthfeel and to add softness.” Patrick Iland and Penfold’s Grange winemaker Peter Gago, Australian Wine Styles and Tastes (p. 135).Vineyard Notes: The fruit for this wine was sourced from the Geographe and Margaret River Vineyards, which were planted in 1973 and 1977 respectively. Due to the maturity of these vines we are able to harvest intensely flavoured fruit from these low yielding vines.

Harvesting Notes: In the cool evening temperatures the fruit for this wine was carefully machine harvested.

Winemaking Notes: Following harvest, the fruit was carefully crushed and destemmed before being fermented on skins to maximize colour and flavour extraction. Once fermentation was complete the wine was matured in one and two year old French and American oak barrels.
 

Tasting Notes:

Alcohol Content: 13.5% alc/vol

Residual Sugar: <2.5g/L

Colour: Bright crimson red.

Nose: This wine opens with lovely fresh and lifted plummy, spice and mint aromatics. Some deeper earthy and chocolate aromatics emerge with time in the glass.

Palate: The palate for this wine is fresh and soft. It displays a bright mix of plummy, raspberry, and choc/mint-like flavours. Oak maturation has given the wine some cedar and cigar box like complexity. A soft, yet supple tannin profile gives this wine a refreshing finish.

Condition: Excellent.

Cellaring Notes: Drink this wine in its youth to enjoy freshness of flavour or cellar for 2-3 years to reveal more bottle-aged complexity.

Best With: Antipasto, Slow roasted meats, game and poultry dishes.
